It is always amazing to me how fast time flies between Thanksgiving and Christmas and then the New Year comes rolling in and brings with it a breath of fresh air. New resolutions, new styles and heartfelt hope that this year will be different than the previous one in several ways and will be just the same in some other ways. There is the hope that the old intolerances will disappear and new friendships will evolve, that pounds will be shed, and that round-toe pumps from last year will still be in vogue.

Gradually as the days go by the realization sinks in that this new year will be no different from the one whose passing we celebrated with champagne and kisses, that people will still be intolerant, prices will still rise and yes, I will be shopping for a new pair of ballet flats.

Things don’t change because people don’t, not without strong commitment or the occurrence of overwhelming events. Change can be tough and in most cases will be, but the one thing that will be different this year is the wisdom that the last year brought about, the knowledge that irrespective of how rough things get, everything will be alright, and this is why every new year should be celebrated with a hopeful heart, an insightful eye and a flute bubbling with champagne.

Death by Chocolate Cookies

For any chocolate aficionado, no festivity is complete without some rich, dark chocolate. A great treat for dunking in a glass of milk or for sharing with friends, this cookie hits all the high notes and is my entry to Festive Food Fair hosted by the talented Anna of Morsels and Musings.

Death by Chocolate Cookies -4

Ingredients:

Adapted from this recipe. (Makes 40 cookies)

  • 2 cups all-purpose flour
  • 3/4 cup Cocoa
  • 1 tsp. baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 2/3 cup sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 3/4 cups (11.5-oz. pkg.) Semi-Sweet Chocolate Chunks
  • 2 Tbsp. milk

Recipe:

Preheat oven to 350 F. Cream butter, sugar,vanilla extract and brown sugar. Beat eggs in one at a time. In a bowl stir together flour, cocoa, baking soda and salt. Add this mixture to the egg mixture slowly until well combined. Add in 2 Tbsp. milk if the mixture appears too dry. Refrigerate for 20 minutes. Using a spoon drop rounded balls onto a baking sheet lined with parchment paper. Bake for 9 minutes, till the outside of the cookie is set but the inside is still soft. Cool completely.
